Speckled beans are one of the most popular legumes in the world. They can be combined in many dishes whether it is on a vegetarian or macrobiotic menu, in a rich salad or in a fine stew, as an individual meal or a side dish.

Preparation:
1. Soak the washed beans in lukewarm water for 4 hours.
2. Cook until the beans soften and salt to taste.
